Ingredients

1 packet Lulubelle Organic Gluten Free Chocolate Muffin Mix

2 eggs (see note)

½ cup (125 ml) vegetable oil

¾ cup (190 ml) water

Preparation

Preheat the oven to 350 °F (180 °C) and line 12 hole muffin pan with muffin cups.

Pour Lulubelle mix and ingredients into a bowl. Blend with an electric mixer on medium for 3 minutes. Add chocolate chips or nuts as desired. Pour batter into muffin cups.

Bake for 25 or until a toothpick inserted in the centre of a muffin comes out clean. Allow to cool for 10 minutes before removing from the pan.

Note: For a vegan version, replace the 2 eggs with 2 tablespoons of flax meal or ground chia seeds mixed with 6 tablespoons of hot water. Let stand, stirring occasionally, for 5 minutes or until thickened.
