Ingredients

1 tablespoon vegetable oil

1 pound ground beef or turkey

2 tablespoons taco seasoning (see note)

12-14 oz tortilla chips (about 1 bag)

1 cup cheddar cheese, shredded

1 cup pepper jack cheese, shredded

1 15 oz can black beans, drained and rinsed

2 roma tomatoes, diced

1/4 cup red onion, diced

1 jalapeño or Fresno chili, thinly sliced

3 tablespoons cilantro (coriander), minced

1 half avocado, sliced

1/4 cup sour cream

1 fresh lime, quartered

Preparation

Preheat oven to 375°F (190°C).

Heat oil in a large skillet over medium heat. Add ground beef or turkey and taco seasoning. Stir to combine and break meat apart. Cook until browned and cooked through, about 5-6 minutes. Remove from heat and drain excess fat from pan.

Spread tortilla chips across a parchment lined sheet tray in a single layer. Sprinkle with beef mixture, black beans and cheese. Bake until cheese is melted, 5-7 minutes.

Remove from oven and top with tomatoes, onion, chilis, cilantro and avocado. Dollop with sour cream and serve with lime wedges.
