Equipment: The Ultimate Skillet
Ingredients
½ cup (1 stick) unsalted butter
235g semi-sweet baking chocolate or chocolate chips
½ cup + 1 tablespoon granulated sugar
2 teaspoons instant coffee powder
2 eggs
1 teaspoon vanilla
¼ cup all-purpose flour
¼ cup cocoa powder
1 teaspoon baking powder
1 teaspoon kosher salt
⅔ cup chocolate chips + 1 tablespoon all-purpose flour
Salted Caramel Ingredients
1 cup granulated sugar
6 tablespoons unsalted butter at room temperature, cubed
½ cup heavy cream at room temperature
2 teaspoons flaky sea salt
Preparation
Salted Caramel Method
In a medium saucepan, heat the sugar on medium-high heat for about 5 minutes until melted. Use a spatula to occasionally stir the sugar. At first the sugar will be lumpy, but will soon melt and start turning a deep golden color.
Once the sugar takes on a dark amber hue, remove from heat immediately and stir in butter. Make sure to stand back a little bit, it will bubble up violently!
Use your spatula to stir the butter and sugar until they melt together completely. This can take 1-2 minutes.
Pour in the heavy cream and add the salt. Use a spatula to stir until everything is combined. Place back on the stove for about 30 seconds, stirring the whole time. Remove from heat and allow to cool for 15 minutes.
Brownie Method
Preheat the oven to 350℉ (180℃).
Heat the butter and 235 g of chocolate in a medium saucepan, on low heat, stirring constantly to prevent any scorching. Once melted, remove from the heat and allow to cool for 15 minutes.
In a large bowl, whisk together the eggs, coffee powder, vanilla, and sugar. Stir the chocolate mixture into the egg mixture and set aside to cool to room temperature.
In a medium bowl, sift together ¼ cup of the flour, cocoa powder, baking powder, and salt and stir it into the chocolate mixture.
Toss the chocolate chips and one tablespoon of flour together in a medium bowl and then stir them into the chocolate mixture.
Spoon half the mixture your cast iron skillet. Pour a layer of salted caramel and top with the rest of the Brownie batter. Sprinkle with more chocolate chips if you like!
Bake for 22 minutes exactly. Don’t over bake, you want it to be gooey! Serve warm with a scoop of ice cream and more salted caramel sauce.
