Parchment paper: 8″ rounds of paper
Ingredients
8 tortillas, 6 in. (15 cm) in diameter
8 tbsp. (120 ml) coarsely chopped chicken
2 cups (500 ml) grated cheddar cheese
4 tbsp. (60 ml) corn kernels
2 tbsp. (30 ml) diced red tomato
2 tbsp. (30 ml) diced tomatillo
Fresh cilantro to taste
Guacamole, sour cream, and salsa for serving
Preparation
Line a panini press with Kana parchment paper.
Place a tortilla on the press.
Add a quarter of each of the ingredients on the tortilla.
Place a second tortilla on top of the ingredients and cover with another sheet of parchment paper.
Cook for approx. 45 seconds to 1 minute.
Repeat the first three Preparation for the remaining quesadillas.
Serve with guacamole, sour cream, and salsa.
