Ingredients
Peels of 6 large potatoes
½ tbsp olive oil
½ tsp salt
1 pinch paprika
Optional, chives + dipping sauce of choice for serving
Preparation
Clean potatoes well, scrubbing to remove any dirt
Peel the potatoes with a peeler, making sure not to remove too much potato flesh.
Soak the peels in a bowl with cold water for about 30 minutes. This will help to remove excess starch resulting in a better crispy peel.
Rinse the soaked peels and thoroughly dry with a kitchen towel or paper towel.
Preheat the oven to 400 degrees F. and line a baking sheet with parchment paper.
Add potato peels to the baking sheet and toss with olive oil and seasonings.
Bake in the oven until golden and crispy, about 15-18 minutes. Be sure to keep a close eye as they can burn easily.
