Equipment: Milo Classic Dutch Oven

Ingredients

400g paneer cheese

2 tablespoons minced ginger

2 garlic cloves, minced

400g canned chopped tomatoes

2 green chillies, kept whole

2 dried red chillies

1 teaspoon cumin seeds

1 teaspoon coriander seeds

1 teaspoon turmeric

2 teaspoons garam masala

1 bay leaf

A splash of cream, optional

Salt and pepper

Limes and fresh cilantro for garnish

Preparation

Heat up some vegetable oil or ghee in your Kana Dutch Oven and sauté the green chilis, the onion and red pepper with the bay, turmeric, and garam masala until soft and fragrant. This should take at least 5 minutes.

Slowly stir in the can of tomatoes, along with half a can of water. Add the cumin and coriander seeds, the dried red chillies, and the paneer chunks. Lower the heat to a simmer and cook uncovered for about 10 minutes.

Finish off by stirring in some double cream, (if using), and seasoning generously with salt and pepper. Add a splash of lime juice and top with fresh cilantro. This pairs wonderfully with some fluffy basmati rice, warm flatbreads and a crunchy fresh salad!

Note: The longer you simmer the tastier it will be.
